Western Black Bean Dip

Makes 1 ½ cups
Serving: third of a cup

How about a summer snack you don't have to feel guilty about? With only 189 calories, and 10 grams of muscle building protein, it's a great alternative to typical packaged bean dips. Its good for you and tastes delish, you can't go wrong!

Ingredients:

  • 1 can black beans (drained and rinsed)
  • ½ cup green onions (chopped)
  • ½ cup tomatoes (chopped)
  • ½ cup salsa
  • 3 garlic cloves (minced)
  • ½ tsp chili powder
  • 1 tsp canola oil
  • ¼ cup cheddar (shredded)
  • Fresh cilantro (minced)


Directions:
 
Sauté beans, 1/2 cup onion, 1/2 cup tomato, salsa, garlic and chili powder in oil for 4-6 minutes, until heated through, gently smashing the beans.
Remove from heat and stir in 3 tablespoons cheese and the cilantro.
Transfer to a serving bowl; top with remaining onions, tomato and cheese.
Serve warm with tortilla chips.
